Can anybody tell me where to start in tracing ancestors who came from Germany?

Do you know whereabouts in Germany they came from? There are a lot of German records on familysearch.org. I managed to get quite a lot of information about OH's ancestors from Bavaria.

Have you tried the Anglo German FHS? They may be able to help you or at least point you in the right direction. I don't have their contact details to hand but I am sure you will find them if you google.

The problem with Germany is that for earlier records, there is no central listing for BMD. You'd need to contact each State archive to request a search.
The links from Cyndislist given earlier explains the proceedure. The problem you appear to have is that you don't know whereabouts your family originated.

How about making contact with an Anglo-German FHS? They are likely to be more familiar with the difficulties and might have alternative suggestions.
If your German ancestors were Jewish, then other data bases are available

I've got most of the UK info but I'm struggling to find out exactly when John Scholer arrived and where from. He was naturalised British in 1891 so I guess I need to track down that record as it should have a bit of information. Then it's on to Charlotte/Agnes whose roots I think are in Dublin...
