Regardless of where/when Emma Jane jnr was born, we can be relatively certain that her mothers mmn was Barnes.

That sort of answers the back-story.
A contact was trying to track down an Emma Hunt who married a James Edmund Jacob. He'd hoped that my Emma Jane Hunt was the lady in question.

I was more or less ruled it out due to the details on the MC - Occupation for Emma J's father, Frederick Hunt, should have been carrier, carman or something of that ilk

He's happy with the marriage, but can't find an Emma Hunt with a father Frederick.

Re the family tree - we can't find any records where Mrs Emma Jacob is referred to with a middle initial or name of Jane.

You might have picked up his tree when he was excited that he may have found 'my' Emma Jane Hunt. (I've advised him to purchases Dora's BC to see if there's a middle name.)
