As requested, recipe for Impossible Pie (from Aust Womens Weekly beginners cookbook):

Ingredients: 4 eggs; 1/2 cup (75g) plain flour; 1 cup (220g) caster sugar; 1 cup (90g) desiccated coconut; 125g butter, melted; 300ml thickenedcream; 3/4 cup (180ml) milk; 1 tablespoon finely grated lemon rind (no white pith); 1/4 cup(60ml) lemon juice.

1..Pre-heat oven to moderate. Grease straight-sided deep 19cm sq cake pan.

2. Whisk eggs in large bowl, gradually whisk in flour then remaining ingredients until mixture well combined. Pour mixture into prepared pan.

3. Bake uncovered for about 45 mins or until browned and set.
If serving warm, stand pie in pan for 20 mins before cutting. Or can refrigerate and serve cold. Dust with icing sugar and extra citrus rind if desired. Could experiment with different citrus varieties, eg orange, lime or mandarin.

Haven't made it for a while; hope you enjoy it! Can serve it with a bit of fruit if you like, too. Then youcan pretend it is "healthy"!!

Don't eat the tortoise shells, Allan....it doesn't count as roughage in your diet :-))

Thanks, Susan, I can feel my blood sugar levels hurtling up the scale :-)

Question: is a slug a snail that has come out of its shell?

At the end of the recipe, Allan, it says that per serve there is 49.8g of fat and 2813kJ (recipe says it serves 6)!! Sounds like a whole day's worth of calories......

:-) re the slug.........or is it a snail who has left home ? :-))
