We haven't any dates setvatvthe moment withbtwo weddings in close proximity it is rather expensive to set any dates until latter in the year. Does anyone want any easy Chicken recipes, I have a couple of foolproof ones,............one that you can also use on the Barbie, thinking towards the summer that can't come quick enough for me, hate the cold

I am not good at BBQs so all advice etc would be a big step forward for me.

Barbados Chicken

For this you can use either chicken breasts, thighs or even strips of chicken it is very ambidextrous !

Serves 4 or mor depending on what cut of Chicken you use

6TBsp soy sauce, 3 TBsp tomato ketchup, 3TBsp vinegar, 1 tsp ground ginger (not necessary if you aren't keen on ginger) 3TBsp honey.

In a large bowl mix all the above ingredients together and put in chicken...8 thighs or 4 chicken breasts, or cut up 2 chicken breasts into strips. Leave to marinate for at least 2 hours. Stir up occasionally. Transfer to a roastin dish and cook for approx 30 min at 200oC.. OR if using the BBQ cook until cooked through.Also wonderful cold.

In the winter I serve with a nice potato mash and two green veg. In the summer a lovely salad....Yum. This also works with pork chops or pork steaks


Maple Roasted Chicken

The same amount of chicken. But this time 2TBsp maple syrup, 2TBsp olive oil , 1 TBsp Dijon mustard, 2 crushed garlic cloves, 2 sprigs fresh rosemary 1TBsp lemon juice. Mix this all together and marinade in the fridge for 2 hours, you can put this direct into cooking dish. Roast in oven at 180oC for 30-35 mins. Then add cherry tomatos about 2500g and roast for a further 10 mins until cooked. Serve with new potatoes and crusty bread

Champion Chicken

1TBsp veg oil, 2 large onions chopped, 2 diced carrots, 2 cloves garlic crushed, 2 lbs chicken pieces, 1 can tomato soup, 3 1//2oz sherry, 1 TBsp honey, 1 TBsp vinegar, 1 tsp Dijon mustard,5 tsp worcestershire sauce, 1/2 tsp oregano chopped, pinch of cinnamon.

Put everything in a cassserole dish, stir well keep chicken covered . Cook
for 45 mins at 185oC or until chicken cooked and tender. Serve with rice
or a salad, also goes with winter veg.

If anyones interested the Maple Roasted chicken is LOW FAT !!!!!!!!!!

We could do seasons. I love to adapt my recipes, OK so there are some like Stew, Steak and Kidney Pud, liver and bacon etc which are real belly warmers. So bring it on perhaps my chicken recipes could be the start of us looking forward to BBQs and nicer weather.

Wheat a bix loaf
easy to make, stays moist like a malt loaf and according to OH very tasty with butter.

1 cup sugar
1 cup mixed fruit
1 cup milk
2 cup wheat-a-bix

mix together in bowl and leave to soak for 1 hour

then add 1 cup S.R. flour
1 egg

mix together transfer to loaf tin and cook approx 50mins-1hr on medium heat middle of oven.

I have made the Wheat-a-bix loaf quite often and it is delicious especially when it is still hot and the butter melts into it.

Hi Val, I only came across it recently and only made it a couple of days ago but was impresses with how easy it was to make and how much OH liked it ! ....might have to try it myself even lol

You are right Uzzi it is very easy to make, and I'm all for easy recipes. We don't get Wheat-a-bix here but we have Weetbix which is what I use, I think it is the same thing really,

What s great set of new recipies, I must printnthem and put them in a folder, I am sure that between us all we have a new book! Anyone know a printer who is cheap?

Please feel free to sell any of my recipies at fetes etc IF THE MONEY goes to the HELP FOR HEROs in your area.

OH is asleep, he went to watch the football on tv in the English Bar.....West Ham our team were in front by 2 goals and then they lost 4/ 2 he is an ardent West Ham Supporter, so I told him to sit in the little sitting room which over looks the sea, whilst got the dinner ready. I crept out, closed the doors and cooked the dinner. I ate mine nearly two hours ago,he is still asleep.

Does ant one else have a sport mad OH or Partner?.

Today we have six people coming for lunch but this will not take place until around 16.30 hrs. The veg are all ready, the chickens, free range are prepared, the starters are nibbles of various olives, cheeses, cheese draws etc, I have cooked some peaches, de stoned them, poured
Masala over them for aboutb30mins in the oven, let them get cold andvthen strained them, added a small amount of sweet wine and whisked it whilst heating it on the hob, when it became pale in colour I let it cool, then poured it over the peaches and covered them when cool. They will be served with cream or ice cream. So far so good,

I would like to make a guineas cake for later or tomorrow but I have lost my recipe can anyone help please.

Re BBQ's get a Gas one, easy to control, and saves all that faffing about getting the coals to the right temp...thats the best advice. Also if cooking chicken part cook it in the oven indoors, then finish off on the BBQ for colour and that smoky taste.

Guiness Cake

1 cup Guiness, 1/2 cup + 2 TBsp butter, put these in a pan and slowly melt butter. Then whisk in 1/2 cup cocoa and 2 cups sugar. In a separate bowl put 3/4 cup sour cream (if you can't get this put 1 desps lemon juice into ordinary cream) beat in 2 eggs and 1 TBsp vanilla extract. Then beat in Guiness mix and 2 cups plain flour and 2 1/2 tsp baking powder. Grease and Line a 9" springform cake tin and have oven at 180oC. Cook for 45 -1 hour, or until skewer comes out clean.Cool and then make

Frosty topping 8oz cream cheese 1 1/4 cups icing sugar and 1/2 cup cream.

Put cream cheese and icing and a little cream into a bowl and whisk. Add cream to make a decent enough mix to spread. You may not need it all.

I also have possibly the best choc cake recipe in the world to share, which you can make into Black Forest or anything you like with fruit, a wonderful gateau made from meringue, and a hot pud called Black Magic when the sauce goes thru and ends up at the bottom of the dish if anyone is interested... certainly both winners..............will post later this week.

Had a lovely Mothers Day, hubby cooked !!!!!!!!!!!!

Green fingers, waiting patiently for your latest offer to materialise.
The meal yesterday went very well, we sat down to eat at around 16.40 hours and were still there drinking and chatting four hours later. Two couples left at about 21 hrs and then we finished the wine...put the dishwasher on, sat outside for about 30 mins and of we went to bed..

I am still tired!
Two of my children telephoned to wish me a happy mothers day, and two sent messages by email as they could not get through by phone. We discovered today that the main phone was not secure in the connection so the phone always seemed to be engaged.

Nothing special to day except to say the guineas is delicious

A new page...I wonder how long it will take to reach page 20?

Now please will someone help me. I kept the carcasses of the free range chicken to make a soup. My result was not good..we had it because it was OK but would not have served it to anyone else.
Please can I have a fool proof recipe?

I used to make good soups but seem to have lost the skill...

The weather is improving day by day and so soon I shall be trying to think of cold meals some of which could be prepared in advance and others that would need to be prepared on the day. Our rather large pool seems to attract most of our friends, just thought, flans would be nice to consider....
We are not very good at BBQs one of our friends usually uses it and it is not large.

Soon I shall start going into town around 17.hundred hours and being the fresh fish as it is brought into the harbour, so recipes for BBQ would also be most welcome.
