why carnt i find births or a marriage????

please could one of you kind people possibly help me? i have found my grandfather's family on 1901 census but i carnt find any record of his and brother and sisters births or their parents marriage any ideas? |

i looked on both and carnt find anything anywhere, also my auntie tells me fathers name was leo and he was polish not german and changed his name so i am getting a bit lost |
