yes i assume that death is hers as she does not appear on 1851 census and it matches dob in 1841 census

however i am perplexed at the young age she appears to marry

The ages for adults on the 1841 census are rounded down to the nearest 5 years so Ann could have been anything from 30 to 34 years old.

Ages given on death records are quite often out by a year or two as it depends on what information the informant gives.

If her age on the 1841 census was 30 to 34 then her birth would have been 1807 to 1811 (not 1811 to 1816 as you stated). If it happened to be 1807 then she would have been 17 when she married - young but not particularly young when it was legal for a girl to marry at 12 years of age right up until 1927 (although it didn't happen very often).
