I would guess the census forms were dropped off on the Wed or Thurs. They were to be filled out to reflect the situation on the Sunday at midnight, to be collected on the Monday. Of course, some folk needed help filling them out, so they would probably get help from the enumerator on Mon., but many would fill them out in advance, and not always on the same day. It's easy to imagine unexpected changes in the sleeping arrangements, and folk forgetting to amend the completed forms to reflect this.

Under English common law, all that was necessary to effect a legal change of name is that you start using your new name, and this not be done with any fraudulent purpose. There was no paperwork - he just did it. There was very little need for paperwork - the only thing in his old name was his tinsmith journeyman's ticket
Nowadays, one has more things in one's old name - G.C.E.'s, B.Sc.'s, driver's licence, bank accounts, etc., and people want to see a bit of paper. The cheapest was to put an ad in the local paper, and xerox it multiple times. The most widely known was to make a contract with oneself, and put a witnessed signature on it - i.e., a deed poll. One could register this, but this was rarely done - mostly one just shoved it in a desk drawer.

Searching free bmd from 1841 to 1861 gives the marriage for James Claxton to Bets* as the one that AustinQ has found and the only one that meets those criteria, so would have been a good place to start:
Marriages Jun 1846 Claxton James York 23 661 Groom Betsy York 23 661
and the 1851 census (at a quick look) gives his daughter Sarah as born in York.

Need help again please regarding the Claxtons. I am unable to find a marriage for James Parker Claxton who married Betsy possibly Groom, I believe it could be as early as 1847, in Norfolk area

Found another problem. The 2 sons of John Thomas Claxton and 1st wife Fanny Frances Butcher were both living with different grandparents in 1881. Eldest John Thomas Claxton with his Claxton grandparents living in Kent ,the youngest Edward Charles Claxton living with his Butcher grandparents in Essex. 1881 Their father John Thomas Claxton living in Lambeth with Catherine Claxton states wife but he didn't marry her until 1894. Found no death of his wife Fanny nor have I found her in the 1881 census so where could she be. Presume James Claxton was the same one who deserted the army in 1876 before his youngest son Edward Charles was born .

Having looked at the 1901 I found that Katie Claxton 18 Domestic servant was living with a Jane Evans age 68 Own means at 3 Christ Church Road, the same address as on her marriage to Harry William Plaw, so she was not with her parents .

Great find on that marriage cert image Tiggit.
On the certificate note that Benjamin (witness) is down as Butchard, which is then corrected. (and maiden name on James Thomas (1875) was Butchard.)
James Thomas is a moulder which fits with his occupation on the 1871, and his father is an Engin (eer)? and on the 1871 he was an engine fitter. So all seems to fit.
