Jacquie, We really must exchange family trees. I was looking for my book that had that poem on Santa Claus to add to the thread, but I couldn't find the book!!! I only have 117 days till Christmas :) |

Yvonne, we really must be related!!! lol Or just great minds.. Honeyed Sweet Potatoes Sweet potatoes glazed with honey, brown sugar and ginger add a touch of sweetness to your meal. Ingredients Makes 8 to 10 servings • 3 pounds sweet potatoes, peeled and sliced about 1/2 inch thick • 1/4 cup packed brown sugar • 1/4 cup honey • 1/4 cup margarine or butter, cut up • 1/4 teaspoon ground ginger Preparation 1. Place sweet potatoes in a Dutch oven or large saucepan with enough lightly salted water to cover. Bring to boiling. Reduce heat, cover and simmer about 15 minutes or until sweet potatoes are nearly tender when pierced with a fork. Drain. Transfer potatoes to a greased 2-quart square baking dish. 2. Mix brown sugar, honey, margarine or butter, and ginger in a heavy small saucepan. Bring to boiling, stirring constantly until sugar is dissolved. Boil gently for 3 minutes. Pour over potatoes. Bake, uncovered, in a 350 degree F oven about 15 minutes or until potatoes are tender, basting occasionally with sauce. Serve immediately. Make-ahead tip: Cook sweet potatoes as directed. Cover and refrigerate potatoes up to 24 hours. To reheat, prepare glaze as above; pour over potatoes. Cover with foil and bake in a 350 degree F oven for 15 minutes. Remove foil; bake about 20 minutes more or until tender, basting occasionally with sauce. |

Oh Jacquie lol. love sweet potato but I am lazy when cooking it, I do roast it but because we do not eat ordinary chips very often, we do sweet potato in a wok lol. When I am cooking dinner my three wander in and out and eat these chips or sometimes prawn cracker instead, still they eat while they wait for me to do my fave ackee (scrummy)with rice and peas, extra coconut milk for them, no pork fat for me I use maggi cubes instead (have you got them there? they are really good, they come from Nigeria they are veggie cube incase you do not know what I am talking about. I would be interested to know what you can get in Grenada, must tell me how you buy stuff and what is easy available and not easy available) over here so much wasn't easy to get now its getting better and the quality is so much better too, I can eat Ital and such a good supply of veg with the best olive oil for salad and now there is cooking olive oil available and now cononut oil is readily available too lol. never saw anything like that here before it has taken many years but its great to see it, just at the time when my tummy starts given me problems grrr. LOL I shall laugh can't get saltfish to easy but last christmas eve before I started to get sick i had a lovely snapper, not many times you can get that maybe twice three times a year. Pat x |

Pat, We've got shark and lambi in the freezer!!! No snapper though, we can get it but a bit expensive at the moment!! When we first bought this piece of land and were building the house we planted the whole of the front garden with sweet potato to break up the soil. Work wonderfully and the sweet potato wasn't bad either! Grass and shrubs now with the odd fruit tree, plantain and coconut thrown in for good measure! The lime trees are doing well....loads of fresh lime juice and we have the first 2 oranges on one of the orange trees...still very small trees but giving some fruit! We lost so much in Grenada in Hurricane Ivan though....can't get Breadfruit yet, our fig (banana) is busting though and our mango trees were only small so OK is! Lost a beautiful pear (advacado) tree as well....Poppin's favourite...shame!! We can get most stuff here now but a lot is expensive! The Island lost a huge percentage of Nutmeg trees and they take so long to grow to full maturity (15 years), it will take a while to get back from Ivan....just keep our fingers crossed we don't get another direct hit...Emily was scary enough!! Pa Did It (Edgar Albert Guest, 1881-1959) The train of cars that Santa brought is out of kilter now; While pa was showing how they went he broke the spring somehow. They used to run around a track--at least they did when he Would let me take them in my hands an' wind 'em with a key. I could 'a' had some fun with 'em, if only they would go, But, gee! I never had a chance, for pa enjoyed em so. The automobile that I got that ran around the floor Was lots of fun when it was new, but it won't go no more. Pa wound it up for Uncle Jim to show him how it went, And when those two got through with it the runnin' gear was bent, An' now it doesn't go at all. I mustn't grumble though, 'Cause while it was in shape to run my pa enjoyed it so. I've got my blocks as good as new, my mitts are perfect yet; Although the snow is on the ground I haven't got em wet. I've taken care of everything that Santa brought to me, Except the toys that run about when wound up with a key. But next year you can bet I won't make any such mistake; I'm going to ask for toys an' things that my pa cannot break. |

Oleander ...it's not that I don't want to get in the mood for christmas.....but when you have a large family who want all the new gadgets on the market,and you don't have the money,then it is a worry.I actually began to panic when I first saw the thread telling us how many days are left.For some of us,and I don't want to be a damp squid here,it is a reminder we can be doing without.I really would love to say O lord,it's christmas.Shit.I forgot....But you are taking that excuse away from me. Now....if it was halloween.......I love that.No stress or worry.Just fun fun fun. Hop-a-long. |

Yeah me too Joy, I think its ridiculous that people add to threads on this board then delete the lot without leaving something, it is frustrating for the person (in this case Jacquie) to be looking like they are talking to themselves its also bad manners, if people are unhappy after they write something they have the option to update rather than delete the lot. To the person who added the nasty comments I saw it at about 5oclock in the morning I was too tired to say then what I am saying here that is what you did was very childish and uncalled for what is always being said on these boards if you DO NOT like a thread well don't read it. I notice our Jacquie is NOT an Arsenal fan LOL. Lisa is so smitten with the Arsenal Footballer I think she would give up all her curly wurlies for him :-) Jacquie I enjoyed reading your answer to my query, I did realise Ivan had caused so much lasting damage in Grenada. Jamaica did get it bad but not nearly as bad as your beautiful Island, I do hope things can be improved on soon for the people of Grenada. Take care Pat x |
