Gooseberry fool

Any one remember the amounts?

My Mum used to make it but It must of been in her head cause I can't find the recipe.
The ingredients were gooseberries, whipping cream and sugar. (I think)

100g/3½oz Caster sugar
3 tbsp Elderflower cordial
200g/7oz Double cream
100ml/3½fl oz thick Greek-style yoghurt

I have several old British cookbooks, and though the recipe would surely be in one of them


Can't find it!!

I found this online, which sounds like the recipe we used to make ........ nice and simple. It dates back to the 17th Century, so would have been too early for anything else to be added.

Nigel Slater's Classic Recipe

450g sharp cooking gooseberries
3-4 heaped tbsp sugar
300ml double cream

Top and tail 450g of sharp cooking gooseberries. Tip them in a pan with 3 or 4 heaped tbsp of sugar and one or two of water, then bring to the boil. Simmer for 10 minutes until the fruit has burst. Cool then chill. Crush with a fork. Whip 300ml double cream till thick, but stop before it will stand in peaks. It should sit in soft folds. Fold in the gooseberries

400g of gooseberries, topped and tailed
70g of caster sugar, plus 1 tbsp extra set aside
200ml of double cream
icing sugar, to serve
1 sprig of mint, to serve
