Festive leftovers

Well anyone care to share what they did with their leftovers? Any unusual or exciting recipes you want to share?

On xmas day we had the usual turkey with all the trimmings. But we had new potatoes and roasties. There were 6 new pots left over.
On boxing day, I found a fillet of smoked haddock in the freezer so baked this.I sliced the new pots into a rectangular dish and drizzled with sesame seed oil, some black pepper and coarse salt.I then sprinkled some paprika over all the slices and baked that too.Along with some baton carrots and peas, I created a smaller dinner for myself. But the sliced pots were delicious.

I have put the leftover turkey into a bag in the freezer to make a turkey and mushroom pie in the new year.

I just went home and left daughter with leftovers


She has been doing slimming world for two years plus and lost over 7 stone so she is very conscious of what she eats

She is ok I will put on some weight but hope it’s not over 3lbs and I know she will work to lose it .

She had steroids treatment when she was going through cancer treatment as she needed the weight to balance the volume of drugs she was being transfused with but it played havoc with her weight
I am very proud she has taken control with her eating and weight

Sooo we had a lovely dinner and pud. And the usual Boxing Day dinner

We had lots of nibbles too that were a treat but hey ho it’s Christmas!

Yes steroids are good but they increase the appetite! Ive been on them for last 3 weeks but weaning off them now.Ive also found myself "grazing" through the day.
Glad shes done well Shirley, you must be so proud of her.

Nibbles are good in the evening infront of the tv….oh and a few choccies..lol

Mnnn Joan , have to try those fritters and maybe with chicken too.

What about using slices of apples? Could you make apple fritters too I wonder?

I made some soup today but I use lentils instead of broth and I use 2 stock pots 1 veg and 1 chicken.

Well, I went to my daughters on Christmas day, but found she'd shared her leftovers. There were turkey livers (ostensibly for the cats), a turkey leg and some other turkey in my bag :-(
The livers didn't make it into the cats stomachs - they were lovely.
They had a bit of leg, the next day - but not too much - it was my lunch.
The rest of the turkey was made into a curry, which I shard with my 'driver' today :-D

I ended up with two turkey carcasses from which I made four litres of stock. These were from Christmas dinner at my daughter's, then two days later she brought the remains of the turkey meat, which went straight into the freezer.

Turkey curry, and seeing Florence mention a turkey and mushroom pie in an earlier post, I might also give that a whirl.

I freeze it Bob. Once it has cooled down I remove any fat that has risen to the top and then put it in a suitable container. The current batch is in 2x2 litre plastic milk bottles and is in the door of the freezer.

i did a silly a while back, put a freezer bag in a pot, the put the stock in the bag, then into the freezer....had a frozen pot shaped bag!!! then forgot what mixture it was till I thawed it!!!

I plated a couple of dinners for later use and still had enough for a good old-fashioned fry-up. :-D
