Another Welsh Favourite Recipe
TATWS PUM MUNUD (Five Minute Potatoes)
This is a very traditional dish that can be served as a starter, a side dish even a main meal. At one time this was very much a staple of the Welsh diet when every smallholding had a potato patch and a pig.
INGREDIENTS:
20 Small White Potatoes 6 Slices of Bacon 275mls Chicken Stock (or Vegetable stock) 1 Onion, finely chopped Salt and Black Pepper to taste
METHOD:
Begin by finely slicing the POTATOES Then, in a pan, brown the BACON before setting the rashers aside Add the STOCK, ONIONS and POTATOES until the potato slices are just tender (about 8 minutes wink/ laugh emoticon) Season with the SALT and PEPER, then layer the BACON on top of the potatoes to reheat them
Plate out the potatoes and add the bacon before serving

I was taught to say it by the mother of Welsh Singer/ Songwriter/ Actor and Political Activist Dafydd Iwan, who was my Welsh Teacher in school! She taught us to sing it to the tune of 'Gilly Gilly Ossenfeffer Katzenellenbogen by the Sea"

Men of Harlech" or "The March of the Men of Harlech" (in Welsh: Rhyfelgyrch Gwyr Harlech) is a song and military march which is traditionally said to describe events during the seven year long siege of Harlech Castle between 1461 and 1468.
Commanded by Constable Dafydd ap Ieuan, the garrison held out in what is the longest known siege in the history of the British Isles.
"Through Seven Years" is an alternative name for the song. Now some associate the song with the earlier shorter siege of Harlech Castle around 1408, which pitted the forces of Owain Glyndwr against the future Henry V of England.
Men of Harlech is widely used as a regimental march, especially by British and Commonwealth regiments historically associated with Wales.
Adapted versions are sung by fans of several Welsh football clubs and as school or college songs around the world.

Don't post very often, but this is a special day for Wales. COME ON WALES you can do it. My son is there now and has been for all the matches, he says the atmosphere is fantastic. Myfanwy was my dad's favourite so enjoying that. The dragon will be roaring in NE Wales tonight. Cheers Jem

This is the recipe my Sister-In-law uses, and they are lovely!
WELSH CAKES
Ingredients: 1lb Self-Raising Flour 8oz Margarine 6oz Sugar 3oz Currants or Sultanas 2 Eggs A Little Milk Pinch of Salt
Method: Sieve FLOUR and SALT into a mixing bowl. Cut up MARGARINE and rub in with the fingertips until the mixture resembles fine breadcrumbs. Add SUGAR and FRUIT and stir in BEATEN EGGS. Mix to a stiff dough. Add a Drop of MILK if necessary. Place on a floured surface, knead lightly and roll out to ¼ inch thickness. Cut with a fluted 2 inch pastry cutter.
Cook on a pre-heated, lightly greased planc (griddle) over a slow heat until golden brown on both sides. Cool on a wire rack.
Serve Fresh. Sis-In-Law spreads butter on them for extra deliciousness :-D

WELSH CAKES (YouTube Demo Recipe Version)
Ingredients: 2 cups four 4 oz butter 3/4 cup sugar 1/2 cup currants 1 or 2 eggs milk if needed 1/4 tsp allspice 1/2 tsp baking powder
Method: Rub fat and flour together until quite fine. Add sugar, currants, spice and baking powder. Add eggs and enough milk to make a soft dough. Roll out on a floured surface, to a thickness of 1/8". Cut into rounds. Set electric frying pan to 350 degrees or if using a stovetop frying pan cook over medium. Spread a bit of melted butter over the surface of the pan. Place the cookie rounds into the pan. Cook until the tops look like they are starting to dry out then flip the cookies and continue cooking until a light golden colour. Remove from pan to cooling rack and sprinkle with white sugar or fruit sugar.
