When it comes to FOOD- think of Wales, and what do you think of?
YES! WELSH CAKES!
Here are two recipes for Welsh Cakes
First, my lovely Sis-In-Laws favourite
WELSH CAKES 1.
Ingredients: 1lb Self-Raising Flour 8oz Margarine 6oz Sugar 3oz Currants or Sultanas 2 Eggs A Little Milk Pinch of Salt
Method: Sieve FLOUR and SALT into a mixing bowl. Cut up MARGARINE and rub in with the fingertips until the mixture resembles fine breadcrumbs. Add SUGAR and FRUIT and stir in BEATEN EGGS. Mix to a stiff dough. Add a Drop of MILK if necessary. Place on a floured surface, knead lightly and roll out to ¼ inch thickness. Cut with a fluted 2 inch pastry cutter. Cook on a pre-heated, lightly greased planc (griddle) over a slow heat until golden brown on both sides. Cool on a wire rack. Serve Fresh.

A delicious Welshcake recipe from Shaun Magic Wales...
SHAUN’S WELSH CAKES: INGREDIENTS:
225g/8oz plain flour 100g/4oz butter 75g/3oz caster sugar 50g/2oz currants ½tsp baking powder ¼tsp mixed spice 1 egg A pinch salt A little milk to bind
HOW TO MAKE THE WELSH CAKES: Sift the dry ingredients (flour, baking powder, mixed spice) together into a mixing bowl. Cut up the butter and rub into the flour. Stir in the sugar and fruit, pour in the egg and mix to form a dough, use a little milk if the mixture is a little dry. Roll the dough out on a lightly floured surface to about the thickness of a biscuit. Use a pastry cutter to cut out rounds. Cook the cakes on a greased bake stone or griddle until golden. The heat should not be too high, as the cakes will cook on the outside too quickly, and not in the middle. Once cooked sprinkle with caster sugar and serve with butter.
ALTERNATIVE: You can try mixed dried fruit or tropical fruit. Some grated lemon or orange rind is also good. An unusual but delicious addition is 1 teaspoon of lavender flowers with some citrus zest. Add a little orange juice, zest and icing sugar to some soft butter to serve with the Welsh cakes.

Kandj and Pat,
MEN OF HARLECH As I didn't recognise the posted one I looked it up, and apparently there are quite a few versions.
This is the version of Men Of Harlech that I am familiar with. It was the Thomas Oliphant version published in 1862
Verse 1
Hark! I hear the foe advancing, Barbed steeds are proudly prancing, Helmets in the sunbeams glancing Glitter through the trees.
Men of Harlech, lie ye dreaming? See ye not their falchions gleaming, While their pennons gaily streaming Flutter in the breeze?

There's a second verse to this version, but I don't remember this bit so well
