Soya Battered Marinated Mussels with Kinaki Dipping Sauce (nuac cham)

You will need approx: 24 mussels.
Ingredients
1 cup Olive Oil.
6 egg whites
150gm cornflour
2 dspn soya sauce
Fresh Coriander.

Method
Batter Mix
Beat egg whites for 1 minute add cornflour and soya sauce.
Remove excess liquid from Marinated Mussels.
Place mussels into batter.

Heat oil in frying pan, place mussels into pan and cook until golden brown.

Turn mussels over and cook until golden brown, 3-4 minutes cooking time. Place on plate and keep warm.

Service
Serve mussels warm with Kinaki Dipping Sauce (Kinaki Nuac Cham).
Garnish with coriander.
Kinaki Dipping Sauce (Nuac Cham)
Ingredients
½ cup Thai Fish Sauce
½ cup Lime Sauce
1 dspn white sugar
1/3 tspn Kinaki Piripiri Chutney (order online www.maorifood.com)
or 1finely chopped chilli
1 finely chopped spring onion
1 finely chopped garlic clove

Method
Place ingredients in a sealed container and allow flavours to infuse.
Usually overnight.

Service
Serve Kinaki Dipping Sauce (NuacCham) with warm spicy battered mussels.

Grub Up - The Maori Way :-D

Pizzaiola & Kawakawa salsa .
A pungent combination transforms tomato salsa into a topping for Rewena Flat Bread
Ingredients
1 chopped onion.
1 grated carrot.
2 cloves chopped garlic.
1 825gm tin of organic whole peel tomatoes.
1 tbsp Kinaki Kelp Seasoning
1 tblsp Horopito infused Avocado oil.
1/4 tsp Kawakawa Rub.

Method
Place garlic, onion, carrot into saute pan lightly cook in Horopito Infused Avocado Oil and saute until translucent.
Add chopped organic tomato and Kawakawa Rub
Bring to boil and simmer for 45 mins, stirring occasionally.
If you want your Kinaki (sauce) to be smooth, puree it in the blender.

Service
Spread Pizzaiola & Kawakawa Salsa on the top of a freshly baked Rewena Flat Bread, sprinkle with Kinaki Kelp Seasoning and place under the griller for 2 – 3 minutes.

Garnish
Lightly spray with Horopito infused Avocado oil.
Serve as a tapa and your favourite oils.

Health Tip
Horopito was taken for its skin repair qualities.
Kawakawa was taken for its liver cleansing and blood purifying qualities.

Organic tomatoes contain vitamin c and is known to be a powerful
antioxidant.
