A fine fois gras complemented with a rather decent Chablis followed by smoked salmon in a vodka and cream sauce with capons. Next a venison shank with new potatoes and caremelised parsnips with a hint and a drizzle of pureed carrot sauce swilled down with a rather good yet unknown Sicilian red. To follow, a light sorbet and fine cheese with thin and finely baked savoury biscuits to finish, accompanied by a rather nice Cognac or Armagnac after the excellent vintage Port. |
