Ah. Rolled lasagna sheets. Hmm. Well, there's a reason I didn't think of that! It would about sextuple (excuse my French) the carbs per canelloni. I use the no-cooking-needed pasta, in a bunch of tomato and white sauce. The white sauce is the part I hate doing with a passion. As it stands, with all the fixtures and fittings, one canelloni (canellonus? canellono?) is 10 grams of carb in my recipe. Makes it really easy for the diabetes carb-counting deal. |

Surely you don't still stuff canelloni - not sure if it's the right spelling by the way:-)) I just cut fresh lasagne sheets in half and roll up the spinach/cheese mixture. I'm a lazy cook. |

I will be spending this Saturday morning sitting on the chesterfield stuffing an army of spinach and cheapo cottage cheese (and I add a ground beef/pork mix) canellonis myself. I adopt your spelling, so it had better be right. I make up two suppers + several lunches for No.1 at a time. |

Don't you just hate people who one-up you? The husband must've eaten loads of iron to get iron poisoning. Why would you do that to yourself? The only way I like spinach is in spinach and ricotta canelloni or pastries - yum. |

Well, the trick with frozen spinach is to thaw it and then squish it, in small handfuls, to get out the water (and probably all the nutrients to, I'd imagine). |
