That's it.

Make pastry how you do.Line the tin,lay the rashers in unless you are doing fancy cooking when you can cut them up a bit.
Beat the eggs,tip them on top of the rashers,
Put the lid on.
Bake it as you would any other pie,About 20-25 minutes I suppose.

The egg seems to puff up to fill the space.
Now you have mentioned it I want one,Goddammit.

Sharron I think that may be how my Mum made it. The annoying thing is that I made it when we were first married but can't find the recipe for it.

Mine is just a two crust pie with a rasher and a beaten egg per person.

It seems it came from the North East in the Depression as a way of eaking out food.

It is an un-natural act to eat it without tomato ketchup!

Egg & Bacon Pie also known as Flan.

6 oz Short crust pastry
2 eggs
1 small can evaporated milk
3oz cheese
6 rashers streaky bacon.
Salt & Pepper
1/2 teaspoon of dry mustard
2 Tomatoes.

(1) Line an 8inch pie plate with the pastry.
(2) Beat the eggs. Remove the rind from the bacon and chop.Add to the beaten eggs with the grated cheese, salt & pepper & mustard.
(3) Stir in the milk and pour the mixture into the pastry lined plate.
(4) Bake on the centre shelf of a moderately hot oven (375 F - Gas Mark 5)
(5) When cooked and golden, remove from the oven and garnish with slices of tomato. if liked. Serve Hot or Cold.

Marilyn my Mum used to make egg and bacon pie, have you got that anywhere?

I'm going back to basics .......just acquired my mother in-law old cookery books
and there are so many old traditional recipes .

Cant wait to try them.......Cook books go back to early 1900's.

If any one would like an old recipe I'll try and look it up for you, if I have it !

Turkey bake is delicious - dried apricots thrown in with milk butter and a toasted bread topping like you would make a crumble

DizLiz: glad to know I'm not the only one making a "left-over" pie for Boxing Day - we have a capon so there's loads left for that. Daughter insists on it so has become a bit of a tradition for my lot too! LOL!

PLAIN BOILED LOBSTER
bread and butter pudding
pavlova
bananas and custard.blackberry and apple crumble.
roast pork/lamb/beef
stew and dumplings
fried bread,tomatoes,bacon.
ryvita and cheese and apple
jelly.
pears/plumbs/apricots
cashew nuts/almonds.
pork and apple pie,home made.(recipe for this)

good quality sausagemeat
cooking apple.shortcrust pastry.
line a flan dish with the pastry,save enough for a lid.
flour a board and your hands,
put sausage meat on board and pat out with floured hands to size of dish.
"made the mistake when i first did this of rolling the meat out,not a good idea,lol."
put meat in dish and cover with slices of apple,cooking or sweet.
cover with pastry lid.
cook for about 20-30 mins gas 5.sorry dont know electric.
eat hot or cold.
when i make the pastry i sprinkle some herbs in.and mix it with an egg.
the meat swells up nice and thick,have it with veg or salad,good anytime of the year and its CHEAP.

A thick slice of toast, with fresh pork dripping on and salt. Just had a slice of this, and very yummy. But, and it is a big but, for me at least, not to be eaten very often, and therefore all the more enjoyable. Now for that big mug of hot tea to wash it down.
