The lobster was delicious, and I had a tropical salad as a starter, but did not need a desert. Lovely setting, outside the restaurant and very close to the sea, could watch people promenading before they settled down for their evening meal. The aromas were wonderful. We had our dinner somewhat early for Spain around 20.30 but as we left at 22.30 the restaurant was packed.

Will be back latter to add some recipes

Have noted that still no favourite 2 or 3 course meals....come on and let us know what you would choose as a very special meal.#


I am investigating the possibilty of having our recipes printed and sold to fund money for our folk in Afganistan. Please see my thread "Our folk in Afghanistan". Your comments will all be comsidered.

Val, The biscuits sound Yummy!!!

Hello Bridget,

Sorry I didn't realisethat Tennis Biscuits are a South African thing.

They are a square light crispy biscuit made with coconut, butter and syrup. We have a different brand here called Tea Biscuit which also has the coconut in.

How about Banana Jam

2 1/2 lb Bananas
Juice of 2 Lemons
8oz Pineapple Juice
2 1/2 lb Sugar

Mash half of the banans and chop the other half
put in pan add juice of two lemons, pineapple juice and the sugar
heat slowly over low heat until the sugar has dissolved
boil for three minutes
cool and pot

Can't cope with the smell of them once they're too ripe! Mashed with creme fraiche or natural yoghurt is good - but I hoped for more ideas.

Do you have an easy banana bread or cake recipe?

Not sure what Tennis biscuits are, are they a plain biscuit perhaps what we call tea biscuits?

I absolutely love Condensed milk...oooooh the calories never mind though

For anyone with a sweet tooth here is an easy tart recipe:


YOGHURT TART.

500 ml Grenadilla Yoghurt
1 Tin Condensed Milk
1 Packet Tennis Biscuits
80 g Butter


- Crush the biscuits

- Melt the butter and mix with the crushed biscuits and line a pie
plate..

- Mix the yoghurt and condensed milk. stir well and pour into the
crust

- Bake at 180 degrees C for 10 minutes.

- Sprinkle some biscuit crumbs on top.

- When cool, refrigerate.

Oh Merlin, Bramley apple crumble and the apples from your own garden..yum yum.

I really miss being able to cook Bramley apples I can't get them here and so far have not found a substitute.!

Good morning Everyone!

Not being able to sleep, thought I would add one or two recipes.
Recipe 1.

Aubergines Parmigiana

3 medium Aubergines sliced
Olive Oil
450 gramms Mozzarella Cheese which has been sliced
75g of grated Parmesan

Method

1. Layer the Aubergies in a colander and sprinkle with salt. Leave to drain in a bowl or in the sink for 30 minutes. Rinse well and drain, pat dry before cooking
2. Fry the Aubergines in the olive oil until softened. approx 2 minutes each side.
3. Layer the Aubergines, both the cheeses and the Tomato Sauce. finish with a layer of the Mozzarella. Season lightly.

If using ready prepared Tomato sauce then do not add any further salt, if using home made tomato sauce add a little salt and freshly ground pepper.
4. Bake in middle of oven for about 30 mins, until the cheese is golden. Leave to rest for about 5 mins before serving with either fresh crusty bread or plain cooked rice.

delicious.


One son had a vegitarian girlfriend and she liked this so much she used to make it for herself. I wonder if she still cooks it.?

Breasts of Chicken ( Without Skin ) get a couple of Leeks Thoroughly wash, Slice lengthways,put in roasting tin or whatever, a few glugs of olive oil ,then put breasts on top ( Chickens )pour honey over them,then get a mixer /Liquidiser,put in carrots, onions, garlic, soy sauce, glug of tomato sauce the same of spicy brown,add a nice glug of Brandy,Sherry and some more olive oil,Whiz it around till a nice gooey liquid form,pour over the breasts,cover with tinfoil and put in a low oven for about hour and half.serve with a medley of veg and saute potatoes.quite nice, I,m having it tonight with bramley apple crumble to follow ( apples from the garden.) **M**.

Ann in Glos, the Pork Stroganoff was delicious, but her are a couple of tips, to make it better. When you have fried the onions, and removed them with the slotted spoon, then have put the Pork in to brown, you will find that even if you have drained the pork first, it will make too much liquid at this stage, so the meat will not brown, it will only boil. So, tip some of the liquid away, and give yourself a little longer to brown the meat, or it will be tough. because the meat has been marinated, it retaines the (sour) Stroganoff flavour.
