Bridget the pork chops sound really good, I will give that a go when next we have chops.

This is what I am going to cook tonight for our main meal. Will let you know the result

Ingredients

* 3 eggs, lightly beaten
* 3 tablespoons milk
* 1 1/2 cups Italian seasoned bread crumbs
* 1/2 cup grated Parmesan cheese
* 2 tablespoons dried parsley
* 2 tablespoons olive oil
* 4 cloves garlic, peeled and chopped
* 4 pork chops

Directions

1. Preheat oven to 325 degrees F (165 degrees C).
2. In a small bowl, beat together the eggs and milk. In a separate small bowl, mix the bread crumbs, Parmesan cheese, and parsley.
3. Heat the olive oil in a large, oven-proof skillet over medium heat. Stir in the garlic, and cook until lightly browned. Remove garlic, reserving for other uses.
4. Dip each pork chop into the egg mixture, then into the bread crumb mixture, coating evenly. Place coated pork chops in the skillet, and brown abut 5 minutes on each side.
5. Place the skillet and pork chops in the preheated oven, and cook 25 minutes, or to an internal temperature of 160 degrees F (70 degrees C).

This can be cooked on the hob if you do not have a skillet

Next week I have just been informed. I have a lot of expats coming to my house for coffee and to read the recipes. Now this could be an opportunity to raise some more money for the original purpose of this thread. What are your views please, including suggestions re raising funds.

I had completely forgotten how delicious most of these recipes sound .Also I am going to copy them all and make a book of my own with a notice inside to say who sent them all.

Any objections from anyone?

I am going to try one of the fish dishes today for our lunch and will try to add some new recipes as well.

I am still looking out for some nibble type recipes for the next film viewing, please.

Last night we had our fortnightly film showing. This started about three months ago and I usually put out some cheese & biscuits, biscuits, nibbles etc for the end of the film. The first time we did this 3 people came, last night we had 12 people plus my OH . We had decided not to put out the same things and I bought choc ices and popcorn which you cook in the microwave.
It was great fun. Our next meeting is in two weeks so suggestions for the interval nibbles would be welcome.

Oh so delighted to see that this is back. A friend in the UK has said she will look at this and see if she can print it a a book form for me and then I/we could see if we can raise some funds for the original intention. However if not please do not be concerned because I have already given a fairly decent gift to the funds.

Tried and Tested and Delicious.... If you lik Almond flavouring and Amaretti biscuits and raspberries this one is for you

6oz soft margarine, 4 ozs golden caster sugar, 3 oz ground almonds, 5 oz SR flour, 3 eggs. Beat these all well together. Grease and line an 8" spring form cake tin. Oven at 160o C. Crush 5ozs Amaretti biscuits. buy small tuub raspberries (250g).

Put half cake mix into tin, spread evenly, top with half of crushed biscuits then put about half raspberries on top. Cover with rest of cake mix, then a layer of the remaining crushed biscuits, and the raspberries. Cook for approx 50-60 mins depends on cooker, ready when skewer comes out clean. Leave to cool in tin, Then can be served with more raspberries and cream or icecream..............Delicious OK with foreign raspberries but definitely better with English ones when in season

and another easy cookie recipe

Chocolate Wheels
What you need:

* 6 oz plain flour
* Pinch of salt
* 3 oz margarine
* 1½ oz caster sugar
* A few drops of vanilla essence
* 1 egg, beaten
* 2 oz chocolate

What you do:

Preheat the oven to 200oC, gas mark 6. Grease 2 baking sheets.

Sieve the flour and salt together into a bowl. Rub in the margarine, using your finger-tips, until you have a fine breadcrumb mixture. Stir in the sugar and mix to a dough with the egg and essence.

Roll out the dough onto a floured surface. Cut out cookies with a 5 cm cutter.

Place on the baking sheets and cook for about 10 minutes until golden. Allow to cool on a wire rack.

Melt the chocolate in the microwave or over a pan of boiling water. Take the bowl off the pan - or out of the microwave - before dipping the biscuit half-way into the chocolate. Leave to set before eating.

A great and easy little recipe

Chocolate Chip Cookies
What you need:

* 6 oz butter
* 4 oz caster sugar
* 8 oz self-raising flour
* 4 oz chocolate chips

What you do:

Preheat the oven to 180oC, gas mark 4. Grease 2 baking sheets.

Cream the butter and sugar together until light and fluffy. Using an electric whisk is quickest.

Sieve the flour into the bowl and fold it in, using a metal spoon to ‘cut’, lift and fold the mixture.

Fold in the chocolate chips.

Roll the dough into small balls and place on the greased baking sheets. Flatten them slightly and leave room between for them to spread out.

Cook for about 15 minutes until lightly browned. Leave to cool and firm up on a cooling rack.

I can see that this thread which I started some time ago seems to have become visible again. Is it still live and if not would anyone like to start adding recipes again. I love cooking, my figure shows that!).
