Anzac Biscuits.
3/4 cup of rolled oats. 1/2 a cup of sugar. 3/4 cup of dessicated coconut. 3/4 cup of wholemeal plain flour. 2 tbs of golden syrup. 1 tsp of bicarb. 2 tbs of boiling water. 1/cup of melted butter.
1. Mix oats, sugar, coconut and flour. 2. Mix golden syrup, bicarb and boiling water, add melted butter then pour into dry mixture, combine.
Bake at 160 degree's for 15 to 18 minutes.
A good Aussie favorite!! Carole xx

Marble Cake
1. Pre-heat oven at 180* C. Grease and line cake tin.
2. In a large bowl cream together till light and fluffy. 1/2 a cup caster sugar 1/2 a cup of margarine, 2 eggs.
3. Sieve into a medium bowl 1 and a 1/4 cups of S/R flour.
4.Collect in a jug 1/3 cup of milk.
5.Add milk and flour to creamed mixture a large bowl.
5. Divide mixture into 3 separate bowls. Add 1 tbs of sieved cocoa into one bowl. Add 3 drops of pink coloring second bowl. Add 1/4 tsp vanilla essence to third bowl.
7. Place spoonfuls of mixture into prepared tin, alternating the colors. Mix lightly with a skewer, to give a streaky appearance.
8. Bake at 30 to 45 minutes. Test with a skewer. Leave to cool in tin. Remove from tin and cool slightly.

So sorry I am late today but we are having a major storm and the electricity is on/off/on/off. Just disconencted the TVs and hope not to have to do the same to the computers.

Starter Tuna pasta with basil and garlic oil
2 cups of loosely-packed fresh basil leaves 2 cloves of garlic Juice from 1/2 a lemon 1/2 cup of extra virgin olive oil 1/2 tsp of sea salt 185 gram can of tuna in oil Spaghetti pasta for 2 Parmigino Reggiano for grating 1 tsp salt for pasta water Preparation: Place basil, garlic, lemon juice, olive oil and salt in a blender. Blend mixture until relatively smooth. Set aside.
Boil water with 1 teaspoon of salt for pasta and cook according to packet instructions. Drain and place pasta back into the saucepan. Pour basil oil over cooked pasta and stir to coat. Drain canned tuna of half its oil and then add tuna to pasta. Stir to combine and break the tuna up if necessary.
Serve tuna pasta in bowls and grate on the Parmigino Reggiano.

Tuna pasta Starter it makes two large starter serves enough for me as a main meal,
my spicy pumpkin muffins uses up left over cooked pumpkin ( I cook mine in the micowave oven ) they freeze well, love all these receipes have book marked this thread.

I chop pumpkin up small dice or slice just put in a pyrex dish with a lid, cook on high for about 5 min give it a stir cook a few more mins mash with a fork leave to cool, drain if a moist pumpkin.

OK, I am taking time out from packing and sorting so here a re few recipes as promised.
1. A family line recipe from the Irish side of me.
Brown Raisin Bread
1 teaspoon of Baking powder. 3 cups of coarse flour or Plain white strong flour, 1 cup of raisins I teaspoon of bread soda 1 and 1/4 cups of butter milk, it is available in most supermarkets in Uk 1and 1/2 cups of fine or pinhead oatmeal 21/2 cups of molasses pr black treacle 2 tablespoons of oil flor or olive oil is what I use. 11/2 cups of wholemeal flour 1 tablespoon of sugar 1 1/2 teaspoons of salt.
Now is the easy part
1. Mix all the dry ingredients together. 2 Mix the oil, buttermilk and molasses and add the wet ingredients to the dry ingredients. 3. mix until everything is moist. 4. Roll out on a well oiled and floured flat tray and bake at normal bread temp for 1/2 hr to 3/4 of an hour
I have not put temp because each persons oven seems different for bread.!!!!
This recipe is also used in a restaurant that is well known in Dublin and is great food.!!! Not allowed to name it, sorry!
Recipe
Cous cous / Tabbula salad
Make using either couscous or tabboula
120g of either couscous or croacked wheat. boiled water 2 juiced lemons 75ml of olive oil 120g of flat parsely finely chopped 5cms of cucmber finely chopped I large tomato finely diced including pips etc.
Method
Place cracked wheat or cous cous into a large bowl and pour over the boiling water until just covered BUT not soaking.and leave for 15 mins and then drain and allow to cool/ When cool add the Lemon juce, Olive oil, parsley, tomatoes and cucumber
Season to taste and serve
Fruity Coleslaw
1/2 white cabbage finely shredded 2 large carrots peeled, grtaed or finely shredded 1/2 red onoing finely sliced 1 apple cored peel if wished, I do not peel them, and chop into medium size pieces 1 table spoon of large raisins 2 tablespoons of mayonaisse 3 to 4 tablespoons of Greek yogurt seasoning to taste
Simply mix everything together and then enjoy eating it!
Three bean salad
This is so nutritous it is frightening!!!
2 oz of any three of these. cannellini, black bean, butter beans, kidney beans, pinto, haricot etc but NOT baked Beans. Rinse and drain the beans 1 red onoin finely diced 1/2 of an Avocado just ripe and diced 1 clove of crushed garlic, 1/2 red pepper finely diced seasoning to taste 1 or 4 tablespoons of olive oil 1/2 fres lemon or lime juice.
Mix everything together and serve.
I smoked mackerel skinned and flaked 1/2 tub of cream cheese
Mix well and season to taste
Hummus120 g of chickpeas, tinned or fresshly cooked. In spain I use the jars and rinse well. 2 lemons juiced 2 tablespoons of Tahina paste available in supermarkets 2 cloves of garlc and crush them 2 tablespoons of good olive oil seasoning to taste Liquidise chickpeas untle they are mushy Add tahina, oil and lemon and whiz until smooth, season to taste and add a little cold water if you wish to have a thinner or lighter mix.
Roasted Red pepper and Feta cheese
2 roasted and skinned red peppers or cheat with a small jar of ready prepared peppers. I block of feta cheese some black pepper 1 teaspoon of lemon juice Whiz everything together and I add 1/2 of a fresh chilli as well because we enjoy spicy food.
My children named these Bliss Balls!!!!
60gr dried apricots chopped finely 60 g dried stined prunes also chopped finely 1 or 2 dried figs chopped finely 1 heaped Tablespoons of pumpkin seeds and of sunflower seeds 30g of currants or raisins 80 gr porridge oats or 60 g of oats and 20 g of ground almonds 4 Tablespoon of coconut milk use the thick milk from the top of the tin OR 1/2 of freshley squeezed Lime jiuce 1 table spoon of tahini paste or peanut butter 1 tablespoon of runny honey
Mix everything together, preferably by hand making sure that the tahini or peanut butter is well mixed in.
Then with clean damp hands mould firmly into plum size balls and set aside in the fridge for about 10 minutes or until you need them
They can also be varied by rolling the balls in coconut , chopped nuts or toasted nuts.

Well, I imagine you wouldn't do this if you didn't want to, but why you would want to leave your beautiful home for a rented apartment for six months I don't know. Over and beyond the call of duty!!!! Still if it is what you feel you need to do, go for it!!!

OK Ann you have a point
Not in any special orde
1. The income goes into our savings for the future, having put 5 out of 6 children through uni, paid three times for IVF which failed, helped with weddings and two divorces etc etc.. the savings looked grim
2. I do still get a lot of joy doing my work and this will be much less harrowing than a nursing Home AND if OH thinks it is getting to much he will simply say enough is enough
3. we will be bale to see more of the family and visit friends who constantly visit us.
4. we will see the grancdchildren more and spend some valuable time with them,
5. e have the wonderful knowledge that we are coming back and I have a clause which allows me to leave at six months if I wisg, the company are supplying the accommdation in a arther elegant house and they are paying for the car!!
^ OH will be able to pay a few visits to his favourite football Team West HAm
