Member Since: April 2008 Posts: 2,797 Send Message	its elderflower champagne - dead easy. 10 ltrs cold water, 2 lemons, 4 tbs white wine vinegar, 40 or so flower heads, 1.5kg sugar Squeeze the lemons into the water, add sugar, white wine vinegar, flower heads. Leave for 48 hrs then strain and bottle in 1ltr plastic pop bottles. 2 week slater drink, well chilled! It is gloriously fizzy and so refreshing - like an angel crying on yer tongue :-)

Member Since: April 2008 Posts: 2,797 Send Message	you may just be in time if you can find any - I started another batch this morning, theres plenty of blossom left here Otherwise wait till the berries appear and make some wine - I like to make batches of blackberry and elderberry seperately, then mix them when they are ready.
