You could get Sarah's death cert and see what it says on there as an indication, ie. widow of / wife of...

She would use the name Askham because that was her name!! The way the birth was registered followed the regulations for someone who was married but had a child out of wedlock. I think they had split up :o(( If you could find George's baptism you might find a father's name recorded, but by this date vicar's were not bothering with this info so much, so you would have to be lucky!
