A James Cowan Morgan died aged 72 - Haymarket District Edinburgh City, Midlothian in 1949 - EDIT probably the son of the couple you name.

Not seeing a marriage for James Cowan Morgan and Mary Melrose on Scotlands People - working on the age at death you give, so b c1876 - from 1892 onwards

EDIT - in light of below findings, are you out by a few years?? Possibly I've wasted a few credits looking for wrong dates!
James C Morgan married Mary D Melrose 1862, unlikely to have died 1948

James Cowen Morgan married Mary -Melrose both were diea in 1948 in Leith so i wonderd if they had any childrenn
He had Confectioner he was 72 when he died
