I don't want to dampen your enthusiasm, but - we haven't actually been able to find anything definite about William or Jemima.
The "information" about William and Jemima is only from someone's tree on Ancestry, and not necessarily correct.
The tree "owner" has not submitted any documentary proof of the details. We can't find any actual records of them online, either.
Without documentary proof, you can't be entirely sure that the details are correct.
John's death record (1900) is an actual record, so is correct - but it doesn't tell you anything about William and Jemima other than that they were John's parents, which you knew already.
The record about the Will and executors of a William Leech in 1856 is an actual record, from the Web: Ireland, Calendar of Wills and Administrations, 1858-1920 - but isn't necessarily for the same William who married Jemima.
It says he's a farmer, "late of Ardmore, East County Cavan", but Jemima's not mentioned in that record, and we can't see the actual Will online to know what it said. That William who died in 1856 had been married to Mary Dermott, who had previously been married to Phil Dermott, so he's probably not the William who married Jemima, unless perhaps Jemima died and he remarried.
"Letters of administration were granted . . . . . . . . . to Mary Dermott (wife of Phil Dermott) . . . . the Relict" - ie - the widow.
Can't find any record of a marriage between William Leech (or other spelling) and Mary Dermott - or Jemima Grant, for that matter.
The tree owner (Arthur J Hutley) obviously doesn't know any facts about Jemima. He has guessed that her birthplace was Ardmore, and has also guessed at a wide range of years for her birth.
I don't know where the notion that John's father William was from Ardmore, Knockbride, came from - unless just from that Will record. Knockbride is about 90 miles from John's birthplace of Londonderry, as stated in John's burial record. I can't find a birth record to match that.
