Yes, I'd come to that conclusion, too.
In which case, we don't know how many other mistakes he made.
If Catherine's surname should be Stevens in 1851, was George not with her and Richard - or did the enumerator just miss him out by mistake?
Her supposed middle initial S is probably also a mistake.
ADDED:
George was with his parents in 1851:
George Stevens in the 1851 England Census Name: George Stevens Age: 27 Estimated Birth Year: abt 1824 Relation: Son Father's Name: John Stevens Mother's Name: Maryte Stevens Gender: Male Where Born: Grate Missenden, Buckinghamshire, England Civil Parish: Islington Ecclesiastical parish: St Mary Phillimore Ecclesiastical Parish Maps: View related Ecclesiastical Parish County/Island: Middlesex Country: England Street Address: Occupation: Condition as to marriage: Disability: View image Registration District: Islington Sub-registration District: Islington West ED, institution, or vessel: 13 Neighbors: Household Schedule Number: 17 Piece: 1499 Folio: 251 Page Number: 4 Household Members: Name Age John Stevens 62 Maryte Stevens 52 [ Mary on image, I think ] George Stevens 27 - married, son, turner Joseph Stevens 13 - son, single

I think the Hunts are a complete red herring. I would suggest that the enumerator made a mess of copying to the record sheets

FMP's 1851, which is a somewhat more accurate transcription than Ancestry's shambles
Golden Lane, Saint Lukes, St Luke, London & Middlesex, England Richard Hunt Head Married Male 56 1795 Labourer in iron foundry East Grinstead, Sussex, England Mary Hunt Wife Married Female 54 1797 Labourer wife Galway, Ireland Catharine S Hunt Daughter Married Female 24 1827 Shoe binder Gibraltar Richard Stevens Grand son - Male 2 1849 Home St Luke's, Middlesex, England
There is no birth for Richard Stevens on the GRO with either MMN Brush OR Hunt
Ditto Joseph who is on 1861 census
What was her address when she married?

From Ancestry - this is the 1851 record Annabel mentions - but this is clearly not the same woman who married George Stevens.
Catherine S Hunt in the 1851 England Census Name: Catherine S Hunt [Catherine S Thomas] - [NO - nothing to do with the Thomases] Age: 24 Estimated Birth Year: abt 1827 Relation: Daughter Father's Name: Thomas Thomas - [NO, nothing to do with the Thomases.] Mother's Name: Mary Thomas - [ NO ] Gender: Female Where Born: British Subject, Gibraltar Civil Parish: St Luke Old Street Ecclesiastical parish: Charterhouse St Thomas Phillimore Ecclesiastical Parish Maps: View related Ecclesiastical Parish County/Island: Middlesex Country: England Street Address: Occupation: Condition as to marriage: Disability: View image Registration District: St Luke Sub-registration District: Whitecross Street ED, institution, or vessel: 12 Neighbors: Household Schedule Number: 41 Piece: 1522 Folio: 293 Page Number: 9 Household Members: Name Age Thomas Thomas 42 - THE THOMASES ARE ALL SCORED OUT Adolphus Thomas 13 John Thomas 11 Thomas Thomas 8 Catherine S Hunt 24 - daughter , married - shoe binder Richard Stevens 2 - grandson, Middlesex, St Lukes
The Thomases have been scored out on the image, with "NIL" written across them. In any case, they were just one of several households at the same address - 104 Golden Lane.
Catherine and Richard are actually part of this household:
Richard Hunt in the 1851 England Census Name: Richard Hunt Age: 56 Estimated Birth Year: abt 1795 Relation: Head Spouse's Name: Mary Hunt Gender: Male Where Born: East Grinstead, Essex, England Civil Parish: St Luke Old Street Ecclesiastical parish: Charterhouse St Thomas Phillimore Ecclesiastical Parish Maps: View related Ecclesiastical Parish County/Island: Middlesex Country: England Street Address: Occupation: Condition as to marriage: Disability: View image Registration District: St Luke Sub-registration District: Whitecross Street ED, institution, or vessel: 12 Neighbors: Household Schedule Number: 41 Piece: 1522 Folio: 293 Page Number: 8 Household Members: Name Age Richard Hunt 56 - labourer in iron foundry Mary Hunt 54 - Galway, Ireland
Even forgetting the Thomases, it doesn't make sense. If that Catherine is the daughter of Richard and Mary, then she can't be married - unless the enumerator got mixed up with the surnames.
