According to trees, William had siblings:
Francis 1818, Charles 1820, Daniel 1825, and a sister Lydia who apparently died in 1825, per the trees.
Lydia's birth - though I don't see her death record so far:

Now I'm looking at the trees on Ancestry. There are actually a lot of them. Most give his wife's name as Mary, and don't mention Elizabeth. A few show both marriages.
A few say Mary Elizabeth. Those tree owners seem unaware that he married twice. They give the first marriage as proof, and therefore presumably think Mary was sometimes known as Elizabeth, or that she had a middle name
A few say that William's parents were John Bodycoat (1784) and Mary nee Halliday (1785).
So this will be William's baptism:

No wife listed with William in 1841. You already said Elizabeth died in 1840.
On the 1844 travel records, Mary's age is given as 31.
Thomas is listed as his stepson, while Joseph is his son, and Charlotte (10 or 11 depending on which record you look at) is his daughter. That doesn't tie up with 1841 or the info in your post. Presumably a mistake on the part of the shipping clerk.
All from Leicestershire.
I don't see a Mary with daughter Charlotte in 1841.

I have a few of the Bodycoat family born in Leicestershire so perhaps someone might be able to help me with the 1841 census in England or anything else. William Bodycoat born 1811 Leicestershire England, parents John Bodycoat and Mary Haliday. From what I gather William married an Elizabeth Gibbins not sure of the date but they had two children together Thomas b1834 and Joseph b1837 but he died in 1947 in Australia. Elizabeth died in 1840 Leicestershire .William then married Mary? They came over on assisted passage in 1844 with their three children, Charlotte I think was Mary's. I managed to find some information on photos and documents on Ancestry concerning Elizabeth and Mary but I cannot find them now which is a pity because they gave out a lot of information which would have helped me. I thought it was checking out William Bodycoat. I atill keep trying but cant find anything. Any help would be appreciated, I know ladies out there have given me a lot. Julia

No there are no census records available - early ones were destroyed and more recent ones are protected by the Privacy Act for 99 years.
Electoral roll might be helpful depending what years you are seeking.?
