I can't find any of them on the 1841 census

There's a couple of Richard Spillman's in the 1839 Robson's Directory.

The first is a shoemaker- but I suspect this is his father born c1781. His wife Jane died in 1838 and he remarried to Esther Preston in 1839:

Richard Spillman- St Bartholomew Street- Boot & Shoemaker

He's living with Esther on the 1841 in Spilman Yard, Bartholomew Street.
