Aloysius married a lady with maiden surname of Sherman, looking at the birth registrations of Walter and Janet from the 1939 register. If it was a second marriage for her that's not necessarily her name on a marriage record.

Am I missing something here ?
Aloysius married a Florence - nee Sherman - with their children born in Stockport RD from 1912
It's his Father George who was ?married to Jessie. But were they really his parents at her age. Perhaps they registered the birth of an unmarried daughter's child??
The death certificate for Jessie Mitchell/Boyd Parish of Dalkeith in the County of Edinburgh Jessie Mitchell married to George Mitchell Master Hatter died January 14th 1881 at 3pm at Liddles Land, Back Street, Dalkeith aged 62 years. Cause of death Chronic Brights disease of the kidney of unknown duration. Informant was George who was present at the death. Her Father is listed as William Boyd an Ensign with the 49th Regiment of foot, deceased.

PAINFUL CHARGE OF THEFT.
At Dalkeith Police Court on Monday, a young woman, named Agnes Mitchell, daughter of George Mitchell, hatter, Gordon’s Close, was charged with the theft of a pair of blankets and a boy’s vest and trousers on the 24th and 27th May.
Accused pleaded not guilty, but admitted having pledged the articles in order to provide food for the family daring her father’s absence business she didn't get enough of money to keep them. Accused’s father deponed that he gave his daughter no permission to pledge the articles, and alleged that she had no occasion to do so, he left her power to procure what necessaries she required, and during his absence regularly sent her money, which he alleged had all been spent on drink and dissipation. Vincent Mitchell, ten years of age. stated that he had been sent by his sister to pledge the articles, and that she had spent the money in drink. This was stoutly denied by the accused. Sergeant Barclay said that making enquiiy into the charge he found the articles were pledged in the father’s name, and the accused said she was obliged to pledge them in order to keep the family. Bailie Gray said it was a very painful case to find daughter charged with the theft of articles from her father’s house during his absence, and although he had notion that her father had not sufficiently arranged for the maintenance of his family, could not do otherwise than find that she was not warranted in pawning these articles, but he was exceedingly unwilling to send her to prison under the circumstances, and would dismiss her with admonition, trusting that this would be a warning to her to be honest in future.

I don't think the original will tell you anything different. Just because he's listed as father doesn't make true. I think you'll agree that Jessie was definitely on the old side to be having a child in 1880.

You can certainly register with Scotlands People and buy credits, which would allow you to see the original census documents, but as AQ says, if George was claiming to be the children's father, that's what will be on the record.
I suppose it's just possible that he wasn't claiming to be their father, but that either the enumerator or the transcriber assumed that he was.
EDIT:
OK, I've had a look at 1891, and the sons are definitely listed as sons. But as already said, that doesn't necessarily make it true.

No, there isn't. Not on either ScotlandsPeople or FamilySearch.
Per SP, there's no marriage of a George Mitchell and any Boyd in the whole of Scotland 1860-80.
Nor of a George Mitchell to any Jean.
