The original says Ellen is Married but not a word about name change or that that child is hers thats on the 1851 census

Well Thats how I understand it John cowburn born in 1851 is the son of James born 1796 and his wife Alice dootson

Prehaps I have it wrong??

John Cowburn born 1851 is said on the 1851 census to be the son of James and Alice - although Alice seems a bit old at 54 to be having children. It's always possible that he was the son of their daughter Ellen and brought up as James and Alice's son.

James Cowburn b: c1796, Westhoughton, Lancashire and his wife Alice
they had 3 children details are as follows
Ellen b: c 1828 Westhoughton and James b: c 1833 Westhoughton there should also be an older son name unknown
The unknown son married wife unknown
They had a son John Cowburn b: 1851 Westhoughton he married a Sarah Dootson b: c 1852 Westhoughton they married in 1874 in Westhoughton they had 12 children between 1874 and 1896
