Why don't you get in touch with the pub and ask if the current landlord knows its history?
NO mention of the Dovecot on 1891 census
You didn't answer the question about William's address when he married..........................

Olive Jean said that a descendant of Bertha Holloway had "mentioned Dovecote Public House Laxton".
That seems to be the only reason .

There is NO evidence online that he was ever at the pub you mention
Who or what gave you the idea that he was?

Although 1891 says that William was a publican, there's no suggestion that he had any connection to the Dove Cote Inn in particular.
That is the only census which says he was a publican. In 1881 he was still a soldier., and living in Newark, not Laxton. You said that the 1901 census said he was a publican - but he died in 1899.

There will be census entries for the people living at the pub on census night. But this will only tell you who is there then. If the landlord changes in between the census it will not show.
Have you checked out the pubwiki yet?

Yes it was interesting.
Olive Jean now needs to look into where the estate records are held.. Possibilities are the estate itself, Nottinghamshire Reocrds Office ot the National Archives.
If she can't get her answer from the pubwiki then the estate records should.
