Ann Lee, Torquay, Devon

Am tracing my Maternal Line - Mother of Mother etc.

This means surname changes every generation.

Have reached, possibly, an Ann Lee. She married a Thomas Symons on the 12th April 1812 at Tormoham (Torquay), Devon.
No record of either being either born or baptised in Tormoham.

They may have had three children:

Sarah Symonds, no record of birth but baptised in 1816, at St. Marychurch, Torquay. Her Father at that time was a Seaman, and the Family was living within the Tormoham Parish. (My Maternal line).

Mary Symons, born and baptised in Tormoham. Parents living in Upton, Father now a Labourer.

Jane Symons, born and baptised in Tormoham. Parents living in Upton, Father a Labourer.

Both Symonds/Symons and Lee surnames appear prone to considerable distortion in the Devon Church Records.

Has anyone come upon any records that could define where Ann Lee and her husband came from, and where and when Ann was born. And when Ann died, and where.
Is she Sarah Symonds' Mother ? If not, who is ?
Sarah ended up married in Bridford, on the edge of Dartmoor. A long way from Torquay, before motor cars.
